Heavenly Hash Cake

4 - eggs, well beaten
2 cups - sugar
1 cup (2 sticks) - unsalted butter, melted
4 tablespoons - cocoa
1 1/2 cups + 3 tablespoon - Sifted SWANS DOWN Cake Flour
3/8 teaspoon - salt
3/4 teaspoon - baking powder
1 cup - finely chopped pecans (optional)
2 teaspoons - vanilla
1 package - large marshmellows
1 box - powdered sugar
4 tablespoons - cocoa
1 teaspoon - vanilla
1/2 cup (4 ounces) - evaporated milk


PREPARATION

Make Cake: Preheat oven to 325º (300º if using dark pans). Butter and lightly flour 9 x 13 inch pan. Mix all ingredients together. Pour into prepared pan Bake 30 to 40 minutes. Add 1 package of marshmallows cut in half and placed on top of cake.

Make Icing: Mix sugar and cocoa, evaporated milk and vanilla and pour over marshmallows. Spread evenly over cake.
