Healthier Shrimp Salad Po Boy

Serves: 6
1/4 lb. - cooked shrimp, peeled and deveined
3 - celery stalks, minced
2 T. - green onions, chopped (we prefer Luizianne)
french bread, with lettuce, slice tomato, and pickles, if desired


PREPARATION

MIX shrimp, celery, mayonnaise, and green onions well. Add Cajun seasoning and hot sauce to taste, stir to combine.

SPOON shrimp mixture onto sliced French bread; add more mayonnaise, lettuce, tomato, and pickles, if desired.
