Chewy Sugar Cookies

Serves: (approx. 6 dozen cookies depending on size of cookie)
1 1/2 cup - granulated sugar
1 cup - unsalted butter, softened
2 - eggs
2 3/4 cups + 2 tablespoon - Sifted SWANS DOWN Cake Flour
2 teaspoons - cream of tartar
1 teaspoon - baking soda
1/4 teaspoon - salt
1/3 cup - sugar
2 teaspoons - cinnamon


PREHEAT oven to 400°.

SIFT SWANS DOWN Cake Flour, lightly spoon needed quantity into measurement cup.

IN a large bowl, cream butter and sugar. Add eggs one at a time then add vanilla.

IN a separate bowl, sift together SWANS DOWN, cream of tartar, baking soda and salt, blend well. Slowly add flour mixture to butter mixture and blend well.

COMBINE â…“ cup sugar and 2 teaspoons cinnamon in a small saucer.

FORM dough into 1” balls and roll into cinnamon sugar. Place on buttered cookie sheet about 2” apart.

BAKE at 400° for 8-10 minutes or until golden brown. Remove from cookie sheet to wire rack immediately to cool. Store covered at room temperature.
