Pimento Cheese Toasties

Inspired by quintessential Southerner Julia Reed’s Cheese Dreams cheesy bites recipe, these tiny sandwiches are filled and topped with our Hot & Spicy Pimento Cheese, then baked to bubbling perfection. Prep them a day ahead and store covered in the refrigerator until ready to bake.
Ingredients
- 1 cup Hot & Spicy Pimento Cheese
- 1 large egg, beaten
- 10 slices firm white sandwich bread (we used Pepperidge Farm)
Directions
- Preheat broiler to high. Line a baking sheet with parchment paper.
- In a bowl, combine the Hot & Spicy Pimento Cheese with the beaten egg and mix well.
- Cut the crusts from the edges of each bread slice. Cut each slice into 4 squares, yielding 40 small bread squares.
- Spread 1 teaspoon of the mixture on each of 20 of the bread squares; top them with the remaining 20 bread squares to yield 20 toasties.
- Spread another teaspoon of the cheese mixture over the top and sides of each toastie. Place the toasties 1 inch apart on the parchment-lined baking sheet.
- Broil for 3 to 4 minutes or until the cheese is melted and bubbly. Serve hot.
