Grilled Pimiento Cheese Sandwiches

Give the everyday grilled cheese sandwich a mildly spicy upgrade the whole family will love, with help from another classic American snack – homemade pimiento cheese dip. Spread mayonnaise on the outsides of the bread slices to make the sandwiches cook crispy and golden.

  1. PLACE bread slices on a work surface and spread mayonnaise on each slice. (Mayonnaise on the outside surfaces of each bread slice will make the sandwiches golden and crispy when cooked.) Flip 4 slices over and spread 2 heaping tablespoons of Pimento Cheese Dip on each. Cover with the remaining 4 bread slices with mayonnaise side facing up.
  2. HEAT a non-stick pan over medium-low heat and transfer sandwiches to pan, using a spatula if needed. Cook until golden brown on both sides, about 2 minutes per side. Transfer sandwiches to plates and serve with pickles and potato chips, if desired.
