Smoked Almond Chicken Salad Sandwiches

Smoked almonds add another layer of flavor and crunch to a classic chicken salad. Plus, make it extra rich ‘n creamy with Blue Plate Mayo – That’s the good stuff! It’s perfect for sandwiches, on a bed of greens as a salad, or with crackers.
Ingredients
- 2 to 3 cups cooked chicken, shredded (rotisserie or canned chicken is fine)
- ½ cup Blue Plate® Mayonnaise
- ⅓ cup chopped green onion (white and green parts)
- ½ cup finely chopped or sliced smoked almonds
- Freshly ground black pepper
- 12 slices sandwich bread
- Lettuce and sliced tomato if desired
Directions
- In a medium bowl, mix the chicken, mayonnaise, green onion and almonds.
- Season to taste with the black pepper.
- Spread on half of the bread slices.
- Add lettuce and tomato, assemble sandwiches and serve immediately.
