Smoked Almond Chicken Salad Sandwiches

Smoked almonds add another layer of flavor and crunch to a classic chicken salad. Plus, make it extra rich ‘n creamy with Blue Plate Mayo – That’s the good stuff! It’s perfect for sandwiches, on a bed of greens as a salad, or with crackers.

Ingredients

  • 2 to 3 cups cooked chicken, shredded (rotisserie or canned chicken is fine)
  • ½ cup Blue Plate® Mayonnaise
  • ⅓ cup chopped green onion (white and green parts)
  • ½ cup finely chopped or sliced smoked almonds
  • Freshly ground black pepper
  • 12 slices sandwich bread
  • Lettuce and sliced tomato if desired

Directions

  1. In a medium bowl, mix the chicken, mayonnaise, green onion and almonds.
  2. Season to taste with the black pepper.
  3. Spread on half of the bread slices.
  4. Add lettuce and tomato, assemble sandwiches and serve immediately.
